Comment est conditionné et conserver le poisson au Mali ?
Au Mali, le poisson, pour sa conservation, est soit salé, fumé, séché et frigorifié. Dans tous les cas, aucun de ces processus ne se fait dans des conditions d'hygiène et de salubrité adéquates.
Le constat est inquiétant : Des matières fécales animales notamment, la bouse de vache est utilisée pour le fumage du poisson au Mali.
Des pesticides sont utilisés pour la conservation du poisson fumé, alors qu'aucune étude ne peut attester de leur non-toxicité pour la santé humaine.
Pire, des matières plastiques, les vieux sachets noirs, sont également utilisés pour fumer le poisson. « En plus, de l'huile de qualité douteuse est utilisée pour enduire le poisson fumé dans le District de Bamako ».
Cette huile, selon des sources, proviendrait de vieilles barriques contenant de produits chimiques. « Allez au marché, vous ne verrez aucune mouche voler autour des poissons frais ou séchés, malgré l'odeur » selon les constats.
Au Mali, il n'existe aucune donnée scientifique sur l'évaluation des risques sanitaires liés à l'utilisation de la bouse de vache dans le fumage du poisson, ni aucune norme relative au séchage du poisson et les produits dérivés. Ceci est considéré comme un retard crucial et un vide « à combler rapidement ».
« Le Mali est un gros exportateur de poisson fumé. Il est temps de légiférer sur des normes de séchage et d'emballage », affirment des membres de la commission Codex alimentarus Mali.
